Raw mushroom salad.

For 4 people: 300g of button mushroom: vinegar; 1/2 lemon; 1 teaspoon of strong mustard; 2 tablespoons of fresh cream (I take semi-liquid); 2 tablespoons of oil; 1/ 2 tablespoons of wine vinegar; salt; pepper, chopped parsley.

Clean the mushrooms: cut off the sandy stalks. Wash them quickly with water and vinegar.
drain them carefully. Cut them immediately into thin strips, sprinkling with lemon juice as you go.

In the salad bowl, prepare the sauce: mix the mustard and fresh cream, then oil, vinegar, salt and pepper.
Mix with the slices of lemon mushrooms and the chopped parsley.
